Phillip Moellering is the General Manager of Brick Vault Brewery & Barbecue, located in Marathon, Texas. Phillip’s passion for BBQ started as a young boy growing up in the Hill Country.  He learned how to make his father’s sausage recipes at an early age, and every summer his family would visit his great uncle’s BBQ restaurant.

After working for the historic Gage Hotel for ten years, Phillip channeled his barbecue heritage to open Brick Vault Brewery & Barbecue in 2018. Known for its oak-smoked meats and craft brews, Brick Vault was named one of Texas Monthly’s Top 25 New Barbecue Joints in 2019 and has quickly become a staple of the Big Bend region.
